Emily's Paddock Shiraz Cabernet Franc

Jasper Hill Emily's Paddock Shiraz Cabernet Franc is grown on elevated, north-east facing Heathcote hillsides. Planted in 1975, the vines are ungrafted, unirrigated and organically farmed.
Minimal intervention is the driving principle at the winery. The handpicked Shiraz fruit is co-fermented with a small amount of Cabernet Franc with the wild yeasts found on the grape skins.
After pressing, the wine is racked off lees to small French oak barrels, both new and seasoned. It matures for 12 months, undergoing natural malolactic fermentation.
Deep purple, Jasper Hill Emily's Paddock Shiraz Cabernet Franc combines richness and elegance with spicy fruit flavours, chalky tannins and persistent natural acidity.
Cellaring potential is 12 years.
